Ingredients

6 slices of white bread torn-up

3 tbl butter

1 lb. elbow mac

1 tbl salt

5 tbl butter

6 tbl flour

1/2 t. mustard powder

1/4 t. cayenne pepper (opt)

5 c. milk

8 oz each of cheddar and mozzarella cheese

1 t salt

Preparation

-combine bread crumbs and 3 tbl. butter -cook noodles in 6 qts water with 1 tbl salt -heat 5 tbl butter in pot over med high heat until foaming -add flour and mustard and whisk for about 1 minute -gradually whisk in milk and bring to a boil stirring constantly -reduce to medium heat and simmer for about 5 minutes -remove from heat and whisk in the cheese and 1 tsp salt for about 6 minutes -combine cheese mixture with noodles in a 9x13 baking dish covering with crumbs -broil for 3-5 minutes.
