Ingredients
2 tbs butter
1 cup cottage cheese
2 cups whole milk
1 tsp dry mustard
Pinch cayenne
1/2 tsp salt
1/4 tsp pepper
1 lb extra sharp cheddar cheese grated
1/2 lb uncooked macaroni
Preparation
- Use 1 tbs butter to grease 9" round or square pan
- Preheat oven to 375 degrees and position rack in upper third of oven
- Purée cottage cheese and spices in blender. Once finely puréed, add milk to blend. Reserve 1/4 cup grated cheese for topping
- In a large bowl combine remaining cheese, Blended mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake for 30 mins.
- Uncover pan, stir gently, sprinkle reserved cheese and dot remaining tbs butter onto surface
- Bake uncovered in oven for additional 30 minutes until browned.
- Let cool for 15 mins before serving.
