Ingredients

12 oz multigrain penne

1 head cauliflower, roughly chopped

4 slices multigrain bread, torn

1/2 c fresh flat-leaf parsely, chopped

1 onion, finely chopped

1.5 C grated extra-sharp cheddar (6 oz)

1.5 C reduced-fat sour cream

1/2 C 1% milk

1T dijon mustard

Preparation

heat oven to 400 degrees. cook pasta according to package directions, adding cauliflower during the last 3 mins of cooking time. drain.

pulse bread in food processor. add parsley, 2 T olive oil and salt and pepper. set aside.

return the pasta pot to medium and add oil to saute onion with salt and pepper for 5-7 minutes. mix in pasta, cauliflower, cheese, sour cream, milk, and mustard.

transfer to a shallow 3-qt baking dish, sprinkle with bread crumbs, and bake until golden brown (12-15 mins).
