Ingredients
sauce:
2 tablespoons butter
1 clove garlic, chopped (optional)
2 tablespoons flour
1.25 cup heated milk
salt, pepper & cayenne
1/2 cup grated cheese (sharp cheddar, mix of cheddar & colby, whatever you want)
dish:
1/2 pound cooked macarroni (or spirals, shells, etc.)
a bunch of brocoli, chopped into florets & steamed (optional)
1/2 cup grated cheese
1/2 cup bread crumbs
Preparation
While cooking the macarroni & brocoli (if wanted), make the cheese sauce.
Preheat oven to 375 F. Butter a 1.5 quart caserole dish (bigger if adding brocoli).
In a small sauce pan, melt the butter. Add the garlic if desired. Stir in the flour and stir until it makes a paste (but don’t let it become brown!).
Add milk (make sure its warm!) slowly and mix until entire sauce is smooth and thick.
Add the cheese & cayenne. Stir until all the cheese has melted. Add salt & pepper if needed.
Mix the sauce with the pasta & brocoli (if wanted). Pour mix into caserole dish. Sprinkle cheese over the top. Sprinkle the bread crumbs over the cheese.
Bake for 30 minutes.
