Ingredients
1 tablespoon butter
1 tablespoon vegetable oil
2 large onions, thinly sliced
4 potatoes
1 pound macaroni
1 cup gruyere cheese, grated
4 tablespoons parsley, chopped
Preparation
Heat water for pasta. Melt butter and oil in wide skillet. Add sliced onions and cook over medium heat, stirring occasionally, until browned, 20 minutes.
Peel potatoes and cut into 1/2 inch chunks. Salt boiling water and add potatoes. Boil until tender, about 8 minutes. Scoop them out and keep in warmed pasta bowl.
Add the pasta to the boiling water and cook until al dente. Drain and add to the potatoes. Toss with the cheese and parsley and season with salt and plenty of pepper. Serve smothered with the onions.
