Ingredients

4 IQF Mahi Mahi fillets

1 cup Maccadamion nuts

1 cup Panko

1 bunch Cilantro

2 Tbs melted butter

2 Tbs Lemon juice

Preparation

Preheat oven to 400 degree farenheight In food processor, add Macadamion nuts, Cilantro, and panko. Chop just enough so that the nuts are not whole. With thawed fillets of Mahi, pat dry and use 1/2 Tbs of butter and lime juice on each fillet. Cover top of fish with Maccadamion and panko crust. Bake at 400 degrees for 10 minutes, or until fish is firm. Serve with lemon wedges. A nice accompanyment is rice pilaf and steamed broccoli.
