Ingredients

½ c. Peanut Butter, creamy

1 Egg

½ c. Fresh Mint, finely chopped

1 c. Parsley, finely chopped

½ c. Warm Water

2½ c. Rice Flour

Preparation

Preheat oven to 375º

Mix Peanut Butter and Egg in a medium mixing bowl until throughly combined. Continue mixing and add Mint, Parsley, and Water. Add Rice Flour ¼ cup at a time. Dough will be coarse.

Use rolling pin to flatten and cut out cookies with cutter of your choice. Use a metal spatula to transfer cookies to a greased baking sheet.

Cook for 8 minutes.

Yields 4 dozen.
