Ingredients

Turkey drippings

1 cup Madeira

6 Tbsp vegetable oil

1 lb peeled, halved shallots

6 Tbsp flour

4 c turkey or chicken stock

2 bay leaves

3 sage sprigs

salt and pepper

Preparation

Place raosting pan with turkey drippings over med-hi heat; bring to a simmer. Add Madeira; whisk for 1 min. Strain into gravy separator.

Into large pan over med heat, warm veg oil. Add shallots; cook, stirring occasionally 10-15 mins. Add flour; cook, stirring constantly, for 1 min. Whisk in stock; add bay leaves and sage springs. Bring to a simmer over med-hi heat.

Reduce heat to med-low; simmer 8-10 mins. Add strained pan drippings; season with s and p. Discard bay, sage and shallots.
