Ingredients

Dressing:

1/4 cup fresh lemon juice

1 Tbsp. honey

2 cloves grated garlic

2 Tbs. olive oil

salt, pepper to taste

Salad:

1 romaine lettuce thinly sliced

1 can Kipper Snack slightly smoked in oil sardines, crumbled

2/3 cup rinsed and drained chickpeas

2/3 cup chopped roma tomatoes

1/2 cup chopped cucumber

1/2 cup chopped yellow bell pepper

1/2 cup chopped red onion

2/3 cup crumbled feta cheese

1/2 cup chopped kalamata olives

10-12 mint leaves thinly sliced

Preparation

Dressing: Place all in blender and blend until smooth and creamy

Salad: Place lettuce in bowl. Top with crumbled sardines Except for mint arrange all in pie shape wedges over salad. Sprinle mint over all. When ready to serve top with dressing and toss.
