Ingredients

BLUEBERRY MEATBALLS

1 1/2 pounds ground turkey

1/4 cup chopped red onion

1/2 cup pureed blueberries

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1/2 teaspoon groud cumin

1/4 cup cabernet sauvignon

1/2 cup italian seasoned bread crumbs

2 eggs

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

CARAMELIZED BLUEBERRY ONIONS

2 large onions

2 tablespoons butter

1 tablespoon vegetable oil

2-tablespoons light brown sugar

1/2 cup blueberries

TOPPING

12 oz. bleu cheese, crumbled

Preparation

To make the meatballs, combine ground turkey, onion, blueberries, nutmeg, cinnamon, cumin, wine, bread crumbs, egg, salt and pepper. Mix well without overmixing. With a small scoop, make meatballs and roll into uniform spheres. Place in baking dish and bake for 20-30 minutes until done. (Cut open meatball to make sure there’s no pink in middle.)

To make caramelized onions, combine onion, butter, oil, brown sugar and blueberries in a 10-inch non-stick skillet. Cook mixture for 15-20 minutes, stirring until most of the liquid is evaporated. Remove from heat.

Drain meatballs, top with caramelized onions and bleu cheese and serve immediately.
