Ingredients

4 Tbs. Butter

¼ Cup all purpose Flour

1 Med. Onion, chopped

2 Garlic cloves Crushed & chopped

½ cup half and half

1 can Lump Crab meat (drained)

1 pkg. imitation crab meat Sherry to taste

salt to taste

white pepper to taste

Shredded Cheddar Cheese Shredded Swiss Cheese

4 Halved English muffins

Preparation

Using butter and flour make a light roux add onions and garlic and cook for 2-3 minutes to combine flavors, thin with half and half. Add Crab and imitation crab and season with salt, pepper and sherry to taste. Stir in Swiss Cheese and heat through. Spoon over muffin halves and sprinkle with Cheddar cheese. Run under broiler until cheese melts and starts to char.
