Ingredients

2 T olive oil

1 small onion, chopped

2 cups chopped celery, including leaves

1 small sweet potato, peeled and chopped

1 carrot, chopped

5 carrot top leaves or 1 bunch parsley, chopped

1 tsp. tabasco

6 cups chicken broth

4 T diced mild green chilies

1 can diced tomatoes

2 c. fresh kale

1 small can tomato paste

15 frozen meatballs

Preparation

Sauté olive oil, carrot, onion, sweet potato and celery for 10 minutes on medium heat. Add remaining ingredients and simmer for 30 minutes until kale is thoroughly cooked.
