Ingredients
*2 1/2 to 3 cups all purpose flour
*2 tbs sugar
*1 tsp salt
*1 pkg (2 1/4 tsp) yeast
*3 tbs olive oil
*1 cup very warm water (about 120 degrees)
Preparation
Mix 1 cup of the flour and all other dry ingredients together. Add oil and warm water until incorporated. Stir in remaining flour until you have a soft dough that leaves the side of the bowl. Knead 5-8 minutes on a lightly floured surface until dough is smooth and springy. Cover dough with plastic wrap and let rest for 30 minutes.
For thin crisp crust: Preheat oven to 425. For thick and doughy crust: Preheat oven to 375.
Grease large sheet pan with oil and dust with cornmeal. Press or roll dough into form for pan you are using and partially bake 7 minutes for thin crust or 12 minutes for thick crust.
Add toppings and finish baking thin crust for 8-10 minutes and thick crust 12-15 minutes or until cheese is melted and starting to brown.
