Ingredients

3 Tablespoons oil.

3 baking potatoes, peeled and diced.

1 1/2 lb. Brussels sprouts, trimmed and roughly chopped.

1 sweet red apple, peeled and diced.

1/2 Cup slivered almonds

1/2 Cup water

1 1/2 Tablespoons lemon juice

Salt and pepper to taste. (I used about 2 teaspoons salt and about 3/4 teaspoon pepper)

Preparation

  1. Fry potatoes in oil until browned.
  2. Add Brussels sprouts, diced apple cubes, slivered almonds, water, salt and pepper.
  3. Cook through.
  4. Add lemon and stir.
  5. Adjust final seasoning, if needed, of salt and pepper.
