Ingredients
3 Tablespoons oil.
3 baking potatoes, peeled and diced.
1 1/2 lb. Brussels sprouts, trimmed and roughly chopped.
1 sweet red apple, peeled and diced.
1/2 Cup slivered almonds
1/2 Cup water
1 1/2 Tablespoons lemon juice
Salt and pepper to taste. (I used about 2 teaspoons salt and about 3/4 teaspoon pepper)
Preparation
- Fry potatoes in oil until browned.
- Add Brussels sprouts, diced apple cubes, slivered almonds, water, salt and pepper.
- Cook through.
- Add lemon and stir.
- Adjust final seasoning, if needed, of salt and pepper.
