Sauce ingredients
1 large onion chopped
2 clove garlic - minced
2 - 28oz canned tomatos - diced
2 tsp Sugar
2 tsp Dried Oregano
“3 good shakes” of Tabasco Sauce
“2 good shakes” of Hot
Red Pepper Flakes
1 pound of very thin veal (scallopini)
2-3 eggs
1 cup all purpose flour
1-2 cups plain breadcrumbs
Salt and Pepper - to taste
Vegetable oil (for fry pan)
1 pkg. Kraft Mozzarella Slices
Preparation
To prepare the veal: Medium - High heat on fry pan w/ oil In one bowl place 2-3 beaten eggs with S & P In another bowl 1 cup of all purpose flour Lay out a sheet of wax paper and spread the breadcrumbs The raw veal should be quite thin, you may need to pound it to get the desired thickness. You want roughly 1/8" - 1/4" - thinner is best Dredge the veal through the flour, then the egg, then the breadcrumbs. Place in the fry pan. Cook both sides until nice and brown. You may need to add additional oil.
The Sauce: Sautee the onion and garlic with oil Add the tomatoes (juice and all) Add all other ingredients Bring to a boil then remove from heat.
Assembly: Place the cook veal in a single layer on the bottom of the 9" x 13" oven proof dish. Cover the veal completely with some sauce. Arrange a single layer of the cheese on top of the sauce Add another layer of sauce Add another layer of cheese So thats - Veal - Sauce - Cheese - Sauce - Cheese Oven @ 350’ bake ± 45 minutes You will have extra sauce - serve it on the side with pasta
