Ingredients
2 1/2 lb. fresh ripe peaches (about 8)
1 cup sifted all-purpose flour
1 cup sugar
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup soft butter
light cream
Preparation
Preheat over to 375 degrees. Lightly grease an 8x8x2-inch baking dish. Wash peaches; peel. Cut in halves; remove pits. Slice peaches into prepared baking dish. Sift flour with sugar, salt, and cinnamon into a medium bowl. With a pastry blender, cut butter into flour mixture until mixture resembles coarse cornmeal. Sprinkle evenly over peaches. Bake 45 to 50 minutes, or until topping is golden and peaches are tender. Serve warm, with cream.
