Ingredients
1/2 gallon milk 1 cup sugar 1cup long grain white rice 1 stick cinnamon 1 tsp vanilla extract 1 egg yolk 2-3 TBL flour
Preparation
in large 6-8 qt pot slowly bring milk to boil.stirring,do not let scald.lower temperature add rice,sugar,vanilla and cinnamon.let cook till rice softens about 1 hour.stir often.when soft reserve some warm milk, about 3/4cup.remove cinnamon stick.depending on how thick you prefer,add egg yolk to milk also add 1 tablespoon flour.mix .you do not have to add flour at all,it helps to thicken pudding.slowly add egg and flour to pudding.let cook slowly on low until it thickens.add cinnamon on top.eat warm or cold.
