Ingredients
3 cups flour
1 tbsp plus 2 tsp pumpkin pie spice
2 tsp baking soda
1.5 tsp salt
3 cups sugar
4 large eggs
2 cups pureed roasted pumpkin (or 1 can)
1 cup vegetable oil
0.5 cup orange juice
1.5 cups cranberries
Preparation
Preheat oven to 350. Grease and flour 2 9x5 loaf pans and set aside.
Combine flour, pumpkin pie spice, baking soda, and salt in a bowl. Combine sugar, pumpkin, eggs, veg oil, and OJ in large mixing bowl. Beat until just blended. Add flour mixture to pumpkin mixture; stir until just moistened, Fold in cranberries.
Spoon batter into loaf pans. Bake for 55-60 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes to cool completely.
