Ingredients
Family pack of chicken legs or legs and thighs (around 18 pieces, skin removed, washed and patted dry)
6-8 Yukon Gold Potatoes pealed and cut into wedges
3 large red and or yellow peppers cut into wedges
2 large onions cut into wedges
6-8 large cloves of garlic pealed and minced
6 tablespoons rosemary minced
6 tablespoons italian parsley minced
3/4 cup to 1 cup of extra virgin olive oil of your choice
1 1/2 tablespoons of kosher salt or sea salt
Ground pepper to taste
Preparation
In a large roasting pan or large pirex mix chicken, chopped potatoes, chopped onion, chopped peppers. Add the remaing ingredients and mix together. Bake in a 350 degree oven for 1 to 1 1/2 hours.
