Ingredients
1 cup mashed persimmon pulp (very ripe)
1 cup sugar
1/2 cup shortening
1 beaten egg
2 cups flour
1 tsp baking soda
1 cup chopped nuts
1 cup raisins (I omit this- my kids don’t like raisins)
1 tsp cinnamon
1 tsp ground cloves
1 tsp nutmeg
1/2 tsp salt
Preparation
Heat oven to 375 degrees. Blend pulp, sugar, shortening and egg. Mix flour and spices in separate bowl. Then add dry ingredients, including the nuts, to the wet ingredients and mix well. Drop by spoonfuls on a baking sheet. Bake for 10-12 minutes.
