Ingredients

2 Slices of sourdough

1 cup of shredded manchego

1 handful of mushrooms

Butter

Preparation

Shred 1 cup of 3 month old manchego cheese and place on 2 slices of sourdough. Saute mushrooms in butter and place in bowl near stove. Put a few slices of butter inside and outside of sandwich put on pan. Cook for a bout 5 minutes until side is mainly brown, add some butter to the opposing side, and then flip and repeat. Once cheese begins to melt, add mushrooms. Cut in half and serve right away.
