Ingredients
2 eggs
3 - 11oz mandarin oranges (well drained save liquid)
2 cups flour
2 cups sugar
1/2 tsp salt
2 tsp baking power
3/4 cup packed brown sugar
3 tbsp reserved mandarin juice (or milk)
2 tbsp butter
Preparation
In a medium bowl beat together the eggs, 2 cans mandarin oranges and Vanilla. set aside. Sift together flour, sugar, salt and baking powder. Add the flour mix to the egg mix a little at a time. Pour into a 9x13 floured pan and bake 30 to 35 minutes at 350F. While the cake is in the oven combine the brown sugar, reserved mandarin juice and butter in a small sauce pan. Bring to a boil. When the cake is out of the oven poke holes all over the cake, then pour the brown sugar mix all over the cake. Let the cake “cure” in the fridge for 1 day. To serve leave in pan and cover with wipped topping and decorate with 1 can (this is the 3rd can) of mandarin oranges.
