Ingredients

Dressing:

1/2 tsp salt and pepper

2 tblsp sugar

2 tblsp vinagar

1/4 cup oil

1 tblsp parsley

Almond topping:

1/4 cup slice almonds

1 tblsp + 1 tsp sugar

1 head butter lettuce

1-2 tins drained mandarins

Preparation

Break lettuce, add mandarins, shake dressing, pour over salad

In small fry pan, continually stir the almonds and sugar till the sugar has melted and coats the almonds with a brown sugar coating, spread out on a plate, let cool and break apart, crumbling onto the salad.
