Ingredients
1 pound fresh spinach, washed and drained
1 can (11 oz) mandarin oranges, drained
1 small red onion, sliced thin
1/2 cup oil
2 TBS tarragon wine vinegar
1 TBS sugar
1/2 tsp dry mustard
1/2 tsp salt
clove of garlic, cut in 1/2
dash pepper
Preparation
tear spinach in pieces and place in salad bowl with oranges and onion. Stir together remaining ingredients. At serving time, remove garlic and pour dressing over salad.
