Ingredients
1/2 package sliced or slivered almonds
1 tablespoon + 1 teaspoon sugar
1/2 head iceberg lettuce
1/2 head romaine lettuce
2 stalks celery, finely chopped
2 green onions, finely chopped
1 can mandarine oranges, drained
Preparation
Cook sugar and almonds over low heat until sugar carmelizes. Stir, watching carefully so that it doesn’t burn. Cool, then break apart. Combine all the salad ingredients together.
Dressing: 1/4 cup oil 2 teaspoons sugar 2 teaspoons vinegar 1 teaspoon chopped parsley 1/2 teaspoon pepper
Shake all the ingredients together. When you are ready to serve pour dressing over salad.
