Ingredients

3 eggs

1 c sugar

3/4 c. oil

1 t. vanilla

1-1 1/4 c. slivered, sliced, or chopped almonds (I like Trader Joe’s Toasted slivered blanched almonds)

sifted together:

2 1/2 c flour

1 t. salt

1 t. baking powder

Preparation

375 oven (lower if runs hot or dark baking pans) Grease, flour 2 baking sheets

Beat together eggs and sugar, add oil and vanilla. Add (I sift in) dry ingredients, combine well. Fold in nuts.

spread batter into logs on sheets (will spread and rise about 30%), bake 25min or until light brown.

cool on sheets a few minutes, then transfer to racks. slice into cookies while still warm, then finish cooling.
