Ingredients

2 c flour

2 tsp soda

1 tsp cinnamon

1 1/2 c sugar

1/2 c shredded coconut

1/2 c chopped nuts

2 c chopped mangoes

3/4 c salad oil

3 eggs, beaten

2 tsp vanilla

Preparation

Preheat oven to 350 degrees. Grease 9x5x3-inch loaf pan. Sift flour with soda and cinnamon into mixing bowl. Stir in sugar, coconut, and nuts. Add remaining ingredients and mix well. Pour into prepared pan and bake for 1 hour and 15 minutes or until done.
