Ingredients
1 lb boneless skinless chicken breasts
1 each green,red,yellow peppers
3 green onions
2 mangos
2/3 cup of chicken stock
3 tablespoons of sugar
2tablespoons soy sauce
2 tablespoons rice vinegar
4 teaspoons curry paste
4 tablespoons vegetable oil
1 tablespoon minced ginger
1 tablespoon minced ginger
Preparation
cut chicken into 4 inch pieces
cut onions, peppers,amd mangos into 1 inch pieces
whisk together stock,sugar,soy sauce,vinegar,cornstarch,and curry paste
stir fry chicken until no longer pink
transfer chicken to a plate
add remaining oil and stir fry peppers and onions about 2 mins
stir in ginger and garlic cook 30 sec
add stock mixture and chicken cook stirring for 2 min or until sauce thickens and chicken is hot
stir in mangos
