Ingredients
2 Mangos, pealed and cut into cubes
1 Lb Chicken breasts cut into small pieces
2 Scallions, chopped
2 Chili peppers
1 cup Basil, chopped
2 tbspoons butter
4 hand fulls of Arugula
Sugar to Taste
Preparation
Over medium heat, melt the butter. When melted, add the scallions, chili peppers and half the basil and cook until the scallions are soft. Once the scallions are soft, add the mangos and cook, stirring occasionally until the begin to soften. Add sugar to to make the mangos sweeter. When the Mangos begin to soften, add the chicken. Continue stirring occasionally. When the chicken is almost cooked through, add the arugula and the rest of the basil. Cook until the chicken is no longer pink, and serve.
