Ingredients
1 cup, dry white wine
1/4 cup, good quality vinegar
1/4 cup sugar
1/2 tsp dried chives
3 cloves garlic, sliced thin
2 tsp crushed red pepper
pinch of salt
2 green Mangoes, peeled diced 1/2 in.
1 med bulb Fennel, sliced very thin
1 grapefruit, sectioned, all pith removed
zest and juice of 1 orange
Preparation
Dissolve the sugar in the wine and vinegar. Add the rest of the ingredients and simmer until the mango is soft (about 1 hour)
I use a pressure cooker - allow the pressure to build to the second setting and cook for 20 minutes.
