Ingredients
2 ripe mangos, peeled and diced into 1/2 inch pieces
1/2 cup chopped scallion (green part only)
1/2 cup diced red bell pepper
2 tablespoons finely diced fresh jalapenos
2 tablespoons chopped fresh cilantro
2 small cloves of garlic, minced
2 tablespoons freshly squeeze lime juice
1/2 teaspoon salt
1 teaspoon extra-virgin olive oil
Preparation
Lightly toss all the ingredients in a bowl. Chill in refrigerator for at least 1 hour for flavors to meld.
