Ingredients
Mangos [frozen works, or a can, cut into cubes]
Thai Yellow Curry Sauce [in a jar]
1 Onion, chopped
Dash of chopped garlic
1 1/2 C snow peas [whole] or Stir Fry Vegetables [canned or frozen]
1 green pepper, cubed
1 tbsp Hot pepper flakes or Hot Sauce [for a nice kick]
1 can coconut milk
1 C of water
Some shrimp or chicken [optional]
1 medium sized potato, cubed and peeled,
Fresh Mushrooms, sliced
Salt
Sugar
and anything else that’s looks tasty to add [such as cilantro, but I never seem to have that around, but it makes it taste really, really good].
Preparation
First, Get a fairly large saucepan and pour in the milk, mango chunks, green peppers, onion, 1/2 the jar of curry sauce, Spice, Garlic, water, snow peas/stir fry vegetables, and bring to a boil.
While this is all boiling, you can sautee the chicken/meat. Add to boiling stuff when cooked through.
Then, after the stuff starts to look like it isn’t frozen anymore and the green peppers are soft, add the potatoes. Lastly, add the mushrooms and some salt, and then check and add more salt, because the potatoes will absorb it all.
Anything else you forgot to throw in, throw it in now. Boil it down good and long to make it thick, and make sure you stir it enough because the mangoes are probably going to stick.
Then check the salt one last time. When it tastes right, turn off the burners, and add a tablespoon or so of sugar. Let sit for a minute or two. Serve.
Best served with Jasmine or Basmati rice, or wierd asian style floppy noodles.
