Ingredients
1/2 tablespoon olive oil
1 cup red onion, finely chopped
1 cup mango, peeled and cubed
1/2 cup tomato, chopped
1-1/2 tablespoons fresh ginger, minced
1/4 cup fresh lime juice
2 tablespoons orange juice
2 tablespoons dry sherry
1-1/2 tablespoons brown sugar
1-1/2 tablespoons white vinegar
Preparation
Stir together all ingredients in a nonreactive bowl. Store covered in the refrigerator until ready to serve.
