Ingredients

½ Tablespoon Olive Oil

1 Cup Red Onion – finely chopped

1 Cup Mango

½ Cup Tomato – chopped

1½ Tablespoons Fresh Ginger – minced

¼ Cup Fresh Lime Juice

2 Tablespoons Orange Juice

2 Tablespoons Dry Sherry

1½ Tablespoons Brown Sugar

1½ Tablespoons White Vinegar

  1. Stir together all ingredients in a nonreactive bowl. Store covered in the refrigerator until ready to serve.
