Ingredients
4 small to medium halibut steaks (4 oz each)
Salt and pepper to taste
2 tbsp. butter
1/2 cup prepared mango chutney
1/4 cup fresh lime juice
1/4 slivered fresh basil
Preparation
Rinse fish and pat dry; season both sides with salt and pepper. Melt butter in a large skillet; add fish. Cook over medium-high heat for about 5 minutes per side or until fish reaches an internal temp. of 150 degrees and flakes easily when tested with a fork. Add chutney, lime juice and basil; cook for 2 minutes more, turning fish once.
