16 oz. Nutrisoda (Mango-Peach)

1 ea. 8oz. Alaskan Halibut

1 oz. Bacon

3 oz. Apples (Julienne)

2 oz. Yams (Diced)

1 oz. White Wine

1 tsp. Garlic

TT Kosher Salt/ Pepper

Preparation

Directions: -in a small sauce pot add the Nutrisoda and reduce until a syrup consistency. Season the halibut and place into a 300 degree oven for 7 to 10 min. glaze the Halibut every 2 min. in a saute pan add the bacon and render, add the yams and saute until the yams observe all the fat from the bacon, now deglaze with the wine and add the garlic and apples. Saute for an additional 3 min. place mixture in the center of the plate and place halibut on top of the mixture; give the halibut one last glaze with the syrup and drizzle the syrup around the plate
