Ingredients
2 1/2 cups firm-ripe mangoes, peeled and cut into 1/2-inch cubes
(hint: find mangos in jar at T Js any season-much easier)
1/4 cup red bell pepper, cut into 1/4-inch dice
2 tablespoons cilantro, cut into 1/4-inch dice
1 tablespoon chopped fresh jalapeño including seeds (from 1 chile)
1/2 teaspoon grated lime rind
2 tablespoons lime juice
Preparation
Toss together mangoes, bell pepper, jalapeño pepper,cilantro, grated lime, lime juice-cover and chill 1 hour.
