3 salad peppers

1 whole cucumber

200g plum tomatoes

200g mango slices

4 spring onions

100g Spanish chorizo (optional)

300g scallops

2 limes

Salt

Oil

Preparation

Method;

* Dice all of the salad, mango and chorizo

* Squeeze the lime juice over the scallops and fry in 2 tbsp of oil with a pinch of salt

* Mix everything together with 3 tbsp oil, a sprinkle of salt and place the scallops on top.
