Ingredients
Filet of Salmon
4 Mangos
medium bunch of Cilantro
3 T. Ginger
pinch of garlic
Jasmine Rice
1/2 can coconut milk
3 T. Sugar
fresh mint to taste
Preparation
Peel and dice mangoes Put them in a small sauce pan and simmer for about 30 minutes. You will need to stir frequently. After about 10 minutes add the garlic, ginger, and chopped cilantro.
Bake Salmon in the overn for about 20-25 Minutes. Sprinkle a dash of ginger and cilantro on the salmon while baking.
Remove from oven and serve with the mango salsa on top of the salmon.
Prepare rice as instructed. Then pour in coconut milk, sugar and mint. Simmer for about 5 minutes constantly stirring.
