Ingredients
1 large red onion, diced (about 1 cup)
3 tablespoons rice wine vinegar
ice Water
1 roasted red bell pepper, diced
2 mangos,diced
3 jalapeno peppers, seeded, diced
1 lime, juiced
sea salt, to taste
1/2 cup fresh cilantro, chopped
Preparation
Cover onion with vinegar and ice water in bowl. Let set for 20 to 30 minutes. Strain.
In a glass bowl,combine the mango, onions, peppers, cilantro and jalapenos. Season to taste with lime juice and salt.
Refrigerate for 1 hour before serving.
