Ingredients

1 mango, peeled and finely chopped

3 cups shredded green cabbage

1/4 green pepper, diced

1/4 English cucumber, diced

1/2 tomato, diced

2 green onions, finely sliced

1/2 medium carrot,finely grated

Juice of 2 limes

1 Tbsp. finely grated fresh ginger

1/8 tsp. poppy seeds

1/4 cup canola oil

a few grindings ground pepper

1 tsp. white sugar

1/4 tsp salt

Preparation

Mix together mango,cabbage, cucumber, carrot, green onion, green pepper and tomato. Whisk together ingredients for vinaigrette: lime juice, canola oil, salt, pepper, sugar, poppy seeds and grated ginger. Toss vinaigrette into prepared fruit and vegetables and let sit for 10 minutes.
