Ingredients

Arugula

Black bean marinated tofu

3 Mangoes

Rice vinegar

Lemon juice

Sunflower oil

Preparation

Sear tofu in small amount of oil over stove until crispy.

Julienne 2 mangoes and put crispy tofu and mango on top of bed of arugula.

Puree 3rd mango with lemon juice, oil, rice vinegar and salt and sugar to taste.

Toss in mango dressing.
