Ingredients

2-4 6oz salmon steaks

1 cup frozen mango slices

4 scallions

pinch of ginger

1 tbsp + 2 tsp. brown sugar

1/4 cup heavy cream

4 tbsp butter

2-4 sprigs of fresh cilantro

Preparation

Place salmon steaks (skin on) on a piece of foil sprayed with Pam. Salt and pepper steaks and sprinkle with 2 tsp brown sugar, grill until salmon flakes easily. Remove from grill and using spatula separate skin from salmon steaks and discard foil.

Saute chopped mango slices and chopped scallions in butter for 10 mins on low heat. Add brown sugar, cream and ginger. Stir until thickened.

Top salmon steaks with mango sauce, sprig of cilantro and enjoy.
