Ingredients

3 eggs

1 cup flour

1/2 tsp salt

1 cup water

FILLING:

2-3 lbs whole milk ricotta

1 egg

1 handful of grated mozzarella

1 handful grated parmesan cheese

salt, pepper and garlic powder to taste.

Preparation

Mix all ingredients together until smooth. Pour 1/2 cup batter onto a hot, flat skillet that has been rubbed or sprayed with oil. Turn once and cook until firm, but not brown. FILLING: Mix all ingredients together to taste. Fill crepes with ricotta filling and roll up. Cover the bottom of a baking dish with sauce. Place manicotti in dish and cover with more sauce and some grated parmesan cheese. Bake at 350 degrees until bubbly.
