Ingredients

dried porcini mushroom

1/3 c olive oil

2 large onions

garlic

salt

3 lbs of stewing beef, each cube cut into quarters

2 beef boullion cubes or powder

fresh rosemary

4 bay leaves

4 cloves

3 cups red wine

large tomato paste

4 c chicken broth

1 1/2 lb penne pasta

1 cup parmigiano cheese

Preparation

  1. Soak porcini in 1 cup red wine
  2. Saute onions and garlic until translucent
  3. add beef and boullion cubes and cooked covered for 20 minutes
  4. add spices and wine and wine from porcini and cook on high uncovered for 25 minutes
  5. add chicken broth and paste and cook until thickened
  6. chop and add porcini
  7. cook pasta in salt and oil
  8. serve beef over pasta
