Ingredients
dried porcini mushroom
1/3 c olive oil
2 large onions
garlic
salt
3 lbs of stewing beef, each cube cut into quarters
2 beef boullion cubes or powder
fresh rosemary
4 bay leaves
4 cloves
3 cups red wine
large tomato paste
4 c chicken broth
1 1/2 lb penne pasta
1 cup parmigiano cheese
Preparation
- Soak porcini in 1 cup red wine
- Saute onions and garlic until translucent
- add beef and boullion cubes and cooked covered for 20 minutes
- add spices and wine and wine from porcini and cook on high uncovered for 25 minutes
- add chicken broth and paste and cook until thickened
- chop and add porcini
- cook pasta in salt and oil
- serve beef over pasta
