Ingredients

3 lb potatoes (new or cubed to 1 1/2 inches)

1/2 cup butter, melted (or olive oil)

salt/pepper

6 T balsamic vinegar

4 T maple syrup (pure is best)

5 cloves garlic, minced

1 bunch green onions, chopped

4 T fresh thyme

finely shredded lemon peel of 1 lemon

Preparation

Heat oven to 325 Toss potatoes with melted butter; sprinkle w/salt & pepper

Roast on baking sheet in single layer for 40 minutes, stirring occasionally.

Mix vinegar, syrup, and garlic and pour over potatoes, roasting 10-20 minutes more. Spoon glaze over potatoes once or twice.

When potatoes are crisp and cooked, remove from oven

Sprinkle with green onions, thyme and lemon zest and serve
