Ingredients
1 tspn whole black peppercorns
6 whole cloves
4 allspice berries
3 juniper berries
1/3 cup kosher salt
2 apple cider
1/2 cup maple syrup
1/3 cup brown sugar
6 garlic cloves
6 thyme sprigs
Preparation
Toast 1st 4 spices over medium heat about 2 minutes. Add salt, apple cider, syrup, sugar garlic and thyme in saucepan , bringing to a simmer. Add 3 cups cold water and pour in pan or bag over pork. Refrigerate 6-8 hours.
