Ingredients

1 1/2 c. grade B maple syrup

1 1/2 c. sugar

4 eggs

1 c. oil

3 c. mashed pumpkin (I often use squash)

3/4 tsp. salt

3/4 tsp. baking powder

1 1/2 tsp. cinnamon

4 1/2 c. flour

1 1/2 tsp. baking soda

1 1/2 tsp. cloves

1 1/2 tsp. nutmeg

Preparation

Beat maple syrup, sugar, eggs and oil together; add pumpkin. Add dry ingredients. Bake at 300 degrees for 1 hour and 20 minutes. Test with cake tester.

This bread freezes excellently.
