Ingredients
1 package Flour Tortillas
1-2 large cans La Fiesta Red Enchilada Sauce - Mild
1 package Smart Ground - Mexican Style
1 package SoyRizo “Sausage”
1 can Refried Pinto Beans
1 yellow onion
1 package sliced mushrooms
1 package shredded Mexican Cheese
Preparation
Dice onions into small pieces. Sautee along with mushrooms with a small amount of olive oil. Add Smart Ground, SoyRizo, and Refried Beans to onions and mushrooms.
Spray 11x9in cake pan with cooking spray. Layer enchilada sauce, tortillas (torn into small pieces), cheese, bean/Smart Ground mixture, cheese; as many times as will fit in pan or until out of ingredients (about 3 layers).
Cook at 350 for about 30-40 minutes or until warm throughout and cheese melted. Can be served with sour cream.
