Ingredients
Medium or Large Prawns (about 10 to 20 depending on size)
1 Tbsp. Kosher Salt
1/3 cup Tequila (to coat and drink)
1tbsp. Triple Sec (to coat and drink)
1 Lemon or Lime
Preparation
Shell prawns leaving tail on and put in a glass bowl. Pour tequila over prawns and mix by hand (licking fingers occasionally). Add tablespoon of triple sec and mix again. While mixing sprinkle kosher salt on prawns and continue mixing. Slice lemon or lime in half and squeeze over prawns. Mix one final time to ensure prawns are evenly coated, then let sit for 15 minutes. Skewer and grill until pink, but don’t over do it. Charing is fine, but these are also good slightly underdone. They can also be broiled or stir-fried, but grilling offers the best flavor.
